Sesame Chicken with Broccoli
In addition to having the traditional flavor—sweet and somewhat spicy—this stir-fried sesame chicken with broccoli is packed with fresh broccoli florets. Accompany with your preferred Asian noodles or white or brown rice.

Ingredients
One and a half pounds of skinless, boneless chicken breast, divided into 1-inch pieces
two tsp cornstarch
1 tsp salt, or more to taste
1/4 tsp white pepper, or according to flavor
two tsp finely chopped, fresh garlic
two tsp finely chopped fresh ginger
1/4 cup plus 1 teaspoon, divided, of your preferred cooking oil
one-third cup soy sauce
one-third cup hoisin sauce
one-third cup rice vinegar
One tsp sambal oelek, or according to tast
Two tsp of sesame oil
Half a cup of carrots, thinly sliced
Sliced shallots, half a cup
Fresh broccoli florets in four cups
One tablespoon of cornflour
One spoonful of soy sauce
one-third cup of sesame seeds, or more to taste
Directions

Put the pieces of chicken in a basin. Add white pepper, salt, and cornstarch to taste. Coat the chicken evenly and put it aside.

In a small nonstick skillet, heat 1 teaspoon cooking oil over medium heat. Add the ginger and garlic, and stir-fry for one minute or until fragrant.

Add the rice vinegar, sesame oil, sambal oelek, soy sauce, and hoisin sauce. Bring to a boil and simmer for one minute while stirring. Take off the heat and place aside.

In a large nonstick skillet or wok, heat 2 tablespoons oil over medium-high heat until extremely hot. Carefully add the chicken chunks to the heated oil. Simmer the chicken pieces for 8 to 10 minutes, tossing occasionally, or until they are gently browned all over. There will be spattering from the chicken bits, so make sureto move the chicken about with a long-handled spoon or other tool.

After removing the chicken from the skillet with a slotted spoon, add the final 2 teaspoons of frying oil. After adding the broccoli, shallots, and carrots, stir constantly and quickly for three to four minutes.

Add the prepared sauce and heat for 2 to 3 minutes, or until the vegetables are cooked to your liking.

In a small bowl, combine cornstarch and 1 tablespoon soy sauce. Stir constantly until no lumps remain. Stir the cornstarch slurry into the skillet quickly until thoroughly mixed. Return the chicken pieces and simmer for 2 to 3 minutes, stirring frequently, or until well cooked.

Take off the stove, top with sesame seeds, and serve warm.
