Ingredients:

  • 350g (12 oz) spaghetti or your favorite pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 6 anchovy fillets, chopped
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1/3 cup Kalamata olives, pitted and sliced
  • 2 tbsp capers, drained
  • 1 can (400g / 14 oz) diced tomatoes
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste
  • Grated Parmesan cheese (optional, for serving)

Diriction:

  1. Cook the Pasta: Cook spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set aside.

  2. Prepare the Sauce: In a large skillet, heat olive oil over medium heat. Add minced garlic, anchovies, and red pepper flakes. Cook for about 1-2 minutes, stirring frequently until garlic is fragrant and anchovies start to dissolve.

  3. Add Olives and Capers: Stir in sliced olives and drained capers. Cook for another 1-2 minutes to allow flavors to meld together.

  4. Simmer with Tomatoes: Pour in the diced tomatoes with their juices. Bring the sauce to a simmer and let it cook for about 10-12 minutes, stirring occasionally, until it thickens slightly.
