Ingredients
Vinaigrette:
Three tsp of vinegar made from apple cider
Two tablespoons of pure olive oil
One tablespoon of honey
One tsp Dijon mustard
One pinch of salt
One dash of freshly ground white pepper

Six cups of shredded, cleaned, and dried romaine lettuce
Half a cup of chopped, roasted walnuts
Half a cup of crushed Gorgonzola
1 red pear, cut into slices and cored
1/4 cup of pomegranate seeds
One sliced green onion

Combine the extra-virgin olive oil, honey, Dijon mustard, apple cider vinegar, salt, and white pepper in a small lidded container. Tightly cover and shake until thoroughly mixed. Put aside.

Arrange the lettuce leaves in a basin. Add crumbled cheese and toasted walnut pieces on top. Arrange a fan of pear slices over the salad and top with chopped scallions and pomegranate seeds.
