 Grandma's Cucumber and Onion Salad 

Every summer, when their gardens yielded baskets of cucumbers, both of my grandmothers prepared this salad with cucumbers and onions. This refreshing side dish goes well with any dinner. One of my grandmothers left out the celery seed and green pepper. In order to swiftly chill it and lessen the vinegar taste, she also added ice.

Ingredients 



7 cups sliced cucumbers

salt as needed

1 cup sliced onions

1 cup sliced green bell pepper

Dressing:

2 cups white sugar

1 cup white vinegar

1 tablespoon celery seed 

2 teaspoons salt, or to taste

Directions

Put the cucumbers in a sieve and season with a generous amount of salt. Leave for about 15 minutes, or until the cucumbers begin to release water. Cucumbers should be drained and rinsed.

In a serving bowl, combine cucumbers, onions, and green bell pepper.

In a larger bowl, whisk together sugar, vinegar, celery seed, and salt to make the dressing.

After adding the dressing, toss to coat the cucumber mixture completely.
